Raman spectroscopy solves the problem of meat adulteration

With the improvement of people's living standards, everyone's pursuit of food is also becoming more and more intense, and high-quality meat is more and more favored by people of all ages. Food, barbecue, fitness enthusiasts are willing to spend more money to pursue high-quality meat. Therefore, there are criminals in the market who adulterate meat. Rat, fox and mink meats are used to pass off high value-added meats such as mutton and beef for additional benefits.image.png

There have been news of meat adulteration all over the country. At the same time, adulterated meat may have major food safety hazards, causing certain harm to the human body. For example, duck meat injected with water retaining agent to impersonate lamb can lead to the loss of calcium in the human body; it may be possible to eat mouse meat and fox meat of unknown origin so that consumers cannot enjoy the food with peace of mind.

For example, Oceanhood uses Raman spectroscopy to try to collect Raman spectra from different types of meat, model and analyze, and explore new methods to solve the problem of meat adulteration using spectroscopy technology.

Ingredient Preparation: Went to the market to buy fresh pork, duck and beef. After washing and removing the blood water, the pork, beef and duck meat are crushed with a meat grinder to make a test sample, and 1 g of sample is taken to prepare for testing.

The spectral spectrum of pork, beef and duck meat was collected by portman532 portable Raman spectrometer, and the 532nm Raman spectrum collected was shown in the following figure: Different meats were significantly different in the spectral range of 1000-1800cm-1, 2800-3100cm-1. We talk about the characteristic peaks of 3 kinds of meat extracted, as shown in the following table.

After that, we collected the data several times and performed PCA algorithm analysis on the Raman spectra of the three meats. It was found that it was possible to distinguish between three types of meat very clearly.

The experimental results prove that Raman spectroscopy is feasible for the detection of meat adulteration!

Experimental Expansion:

Based on this experiment, we hope to do two directions of expansion experiment.

1. Broaden the sample volume of tested meat, and sample and analyze more rat meat, fox meat, chicken and other meats.

2. Improve the detection technology, using the micro Raman hyperspectral detection equipment developed by Ruhai Optoelectronics for scanning imaging, and analyze the meat composition of a whole piece of meat.
